Souvlaki Beef
Ingredients
For the beef marinade
- 1 lb top sirloin beef cut in 1-inch cubes
- 1 tablespoon dijon mustard
- 1 lemon juice
- 1 lemon zests
- ½ tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 garlic clove minced
- 3 tablespoons olive oil
- Salt and pepper to taste
For assembling the skewers
- 1 green bell pepper cut in 1-inch cubes
- 1 red bell pepper cut in 1-inch cubes
- 1 large onion cut in 1-inch cubes or petals
- 1 tablespoon olive oil
- salt and pepper
Instructions
- To a large bowl, add the meat and marinade ingredients. Toss to coat. Cover bowl with a lid, plastic wrap and leave in the fridge for 1 hour or overnight for best results.
- Before cooking. Place the cubed veggies in a medium bowl with 1 tablespoon of olive oil, salt and pepper to taste.
- If using wooden skewers, dump them in water to avoid burning during cooking time. Cut the tips to fit your skillet.
- Thread the beef along with the veggies between each piece of meat.
- Brush the skewers with the remaining marinade.
- Bring a large grill pan over medium heat, add 1 tablespoon olive oil, cook the skewers for 8 minutes, 2 minutes on each side. Drizzle more olive oil along the process to avoid burning.
