Have you tried making dairy free ice cream with coconut milk? I’ve heard great things about it so I wanted to give it a try in my new ice cream maker.
I also see folks are using sunflower seed butter as a replacement for peanut butter. Personally, I don’t think sunflower seed butter tastes much like my beloved peanut butter.
Sunflower butter has a unique taste of it’s own. Nonetheless, I figured I’d give it a try. This sugar free low carb sunbutter ice cream is somewhat of a mock peanut butter ice cream that is both dairy and nut free.

I have to admit, this dairy free sunbutter ice cream took me by surprise. The full fat coconut milk was very close to regular dairy ice cream that I’ve made.
I didn’t use any stabilizers so it did need to thaw a bit on the counter before scooping, but I’m used to that with my homemade ice cream. The scoops came out nicely formed once it became scoopable and it was pretty creamy considering there isn’t any dairy cream in it.
Although I do like sunflower seed butter, I prefer the flavor of peanut butter over it and will likely use peanut butter next time. However, if I had a nut allergy, I’d be all over the sunbutter since peanuts would be off limits.
Now that I’ve introduced you all to dairy free ice cream, I’d like to point out a new feature I’ve added to the blog. All of the recipes I’m adding now have a “Yum” button on them next to the “Print” button. Older recipes are slowly getting converted too.

If you haven’t heard of Yummly, you need to check it out! It’s a great site to save and organize your recipes as well as discover NEW recipes! I know a lot of you use Pinterest for this, but Yummly is all about recipes and food.
I find that searching for a recipe is much better at Yummly than Pinterest because you can key in on specific criteria like ingredient or nutrition data that includes amount of carbs. Yummly has other features like automatically pulling some nutritional information based on the ingredients and recommending recipes based on your interests.
There’s also a community discussion board where you can ask food related questions. So, what are you waiting for? Go ahead and click on the “Yum” button to get started!
Nut and Dairy Free Sunbutter Ice Cream
In saucepan over medium heat, stir coconut milk, coconut oil, sweetener, sunflower seed butter, stevia and sea salt until well combined. Remove from heat and stir in vanilla extract.
Let cool completely then whip up with an electric mixture or blender to add some air.
Pour mixture into an ice cream maker and freeze according to manufacturer directions.
Best eaten immediately. Store leftover in the freezer. Allow to sit 10-20 minutes before scooping.
