A simple berry cheesecake salad is perfect for sharing over summer. It's a quick and easy fruit salad that takes only a couple minutes of prep time.
I was looking for an easy low-carb dessert to make for the 4th of July. Rather than make the mascarpone mousse recipe, I figured I'd try something new this year.
I've always enjoyed my mother's Filipino fruit salad recipe. But I didn't want to take the time to make my own keto condensed milk.
So I came up with this berry cheesecake salad recipe. I used fresh berries and heavy cream instead of a homemade condensed milk. It's the perfect summer salad!
Ingredients
The great thing about the recipe is that you only need four basic ingredients: cream cheese, sweetener, cream, and fruit.
I like to use a blend of pure monk fruit and stevia. But if you prefer a one-for-one sugar substitute, you can just use about a half cup of granular sweetener.
To keep the salad low-carb, I use keto-friendly fruit. But you can add in any fresh fruit you like. It doesn't have to be all berries.
Instructions
To make this simple cheesecake fruit salad, all you have to do is beat cream cheese with low carb sweetener(s) and heavy cream. Then you just fold in your keto friendly berries.
Prepare the Cheesecake Mixture
The first step is to whip the cream cheese in a large bowl. It will need to be brought to room temperature so it whips up easily when beaten with an electric mixer.
After the cheese is light and fluffy, the sweetener and heavy whipping cream are whipped in with the mixer until the mixture is thick and creamy.
Add the Fruit
If using larger fruit like strawberries, cut them up into smaller pieces before adding to the mixing bowl. Although you can use whole strawberries, I find it's easier to eat if you dice them up into smaller pieces.
Small berries like blueberries are fine to add in whole.
A mix of raspberries and blackberries give a nice mix of added color.
Once all the delicious berries have have been added to the bowl, just fold them in gently with a rubber spatula.
Quick Tips
- Keep it low-carb. When making a keto fruit salad, you'll want to use fruits that are the lowest in carbs.
- Add coconut. Unsweetened dried coconut is a nice addition to the salad to change up the taste.
- Fold gently. To prevent smashing the fruit, you need to gently fold them into the creamy cheesecake mixture.
- Use condensed milk. If you have some low-carb sweetened condensed milk on hand, you can use that instead of the heavy cream and sweeteners.
Serving Suggestions
You'll get about 12 cups from the summer berry cheesecake salad recipe. It's a good size to share with a large group of friends and family. You can always cut the recipe in half if you want a smaller amount.
Using red and blue berries makes it a festive red, white, and blue dessert for the 4th of July when combined with the white sweetened cream cheese sauce. But it's such an easy recipe that you'll want to make this fruit salad all summer long.

Ingredients
- 16 ounces cream cheese softened
- ¼ cup monk fruit concentrated powder
- ¼ cup stevia concentrated powder
- 1 cup heavy whipping cream
- 16 ounces strawberries cut into bite sized pieces
- 14 ounces blueberries about 4 cups
- 12 ounces blackberries about 2 cups
- 6 ounces raspberries about 1 cup
- 2-3 teaspoons vanilla extract optional
Instructions
- Beat cream cheese with electric mixer until smooth.
- Add in monk fruit, stevia, heavy whipping cream, and vanilla extract (if using). Beat with electric mixer until thick and creamy. If too thick, a little extra cream can be added.
- Fold in fresh berries. Store in fridge or serve immediately.

Out of the sweeteners listed monkfruit is the only one I use. Would it turn out ok if I used only monkfruit? Stevia had a bitter aftertaste to me, I steer clear from Splenda and swerve gives me stomach cramps. 😏

Just made this dessert. Looks and tastes wonderful. The only charge I made, and it may have already been done, was instead of sweeteners I used a package of sugar free cheesecake pudding and had to use no sweeteners. I just added cream to have consistency I wanted. Prob. about 11/2 C. or slightly more.

Great and easy recipe! however, I noticed your recipe card does not list the vanilla extract, but a picture above shows vanilla extract. How much VE do you recommend? I tasted it without and decided it did need some, so I whipped in a teaspoon at first but after tasting I added another teaspoon and it was perfect! I've made this a couple of times and it looks like it will be a popular summer addition! I made some for a family get together and didn't tell people it was low-ish carb. All I had was frozen fruit, but I just told everyone it was a frozen fruit salad. Didn't mention the cream cheese because my brother-in-law thinks he doesn't like it. LOL. Let it thaw a little in the fridge, but not too much or it gets runny when using the frozen fruit. I still ate the leftovers the next day anyway!
I have some of the cream mix in the refrigerator now, and some mixed fruit in the freezer. I mix up 1 or 2 servings for myself for a treat. I used the canned table cream (which I found on sale, so have some stocked up) and I really liked the taste.

Thanks for a another great keto recipe.Made this today. I used Serve Confectioners sugar as I did not have the 2 sugars called for in the recipe. I subbed a few cherries for the blackberries because that is what I had. Omitted the raspberries as I did not have any on hand, so added more blueberries and strawberries.

I think you need to use fresh not frozen, fruit. I used frozen and after the cream cheese thawed out, it was nothing but a big soupy mess. Plus
it didn’t have nearly enough sweetener. I used swerve confectioners and I must have used a total of 1/4 cup. Way too much cream cheese flavor. To save it I’m going to try to put it in muffin cups and freeze it. Maybe that will help.

I’m confused. The recipe says 1/2t of one sweetener and 1/4t of the other. But in the comments after the recipe, you say there is equivalent to a 1/CUP of sugar. Where does that come from?

Yes. The equivalent granular sweetener would be much more, about a cup or to taste. The recipe uses pure concentrated sweeteners, not the bulk powders that are equivalent to sugar.

Hi Lisa - stumbled across your 4th of July Cheese Cake Berry Salad and decided to make it yesterday and take to the neighbors. It was a HUGE HIT. Although I need to make it a little sweeter next time. I did have some Monk fruit but I used liquid Stevia and don't think I used enough. I also just used regular whipping cream instead of heavy and it came out fine. I sprinkled some chopped walnuts across the top and that just added to your YUM! Thank you!
