    These keto pulled pork nachos are a delicious alternative to traditional nachos. Not only are they just as good, but they are low-carb and keto-friendly as well!

    These pork nachos with cauliflower are just as filling and tasty as traditional nachos without all of the carbs from the tortilla chips. They'll make you feel like you're having a cheat meal while you're actually upping your veggie intake for the day. 

    I love to make this dish on days when I want a meal that's easy to make but still tastes amazing. It's a great meal for families to enjoy for lunch or at dinnertime, as everyone seems to love nachos and is happy to eat them anytime the opportunity arrives.

    You can also transform these nachos into a multiple-course meal if you pair them with other keto dishes, like cauliflower rice or ground beef tacos! Whether the pulled pork nachos are served on their own or with other dishes, it's a convenient and great-tasting keto meal to add to your routine.

    Ingredients Needed To Make Pulled Pork Nachos

    To make these low-carb pulled pork nachos, you will need certain ingredients. Remember that many of these ingredients can be changed depending on your personal preference!

    Pulled Pork

    Low-carb pulled pork adds a good bit of protein to this nacho recipe. It bulks up the dish and helps it to be more filling and satisfying.

    Cauliflower

    Cauliflower florets take the place of tortilla chips for these keto nachos, making these the perfect solution for a low-carb meal. 

    Tomatoes

    Tomatoes add a nice element to these nachos, brightening up the flavors and adding a burst of freshness.

    Green Bell Pepper

    Green bell pepper is a delicious vegetable that adds even more flavor to these already delicious pulled pork nachos.

    Hot Peppers

    You can use either chilies or jalapenos for a touch of heat! Not only are these peppers spicy, but they add a great deal of flavor to the dish as well.

    Taco Seasoning

    How To Make Pulled Pork Nachos 

    These pulled pork nachos are surprisingly easy to throw together for a quick lunch or dinner. Requiring just a small amount of prep work, this dish is perfect for those days when there isn't time to be in the kitchen.

    Before we get to the recipe card at the bottom of this post, here are the steps for making these keto-friendly nachos. 

    Prepare Cauliflower

    Prepare the cauliflower florets by spreading them on a baking sheet and brushing them with oil. Then, sprinkle them with salt, pepper, and taco seasoning.

    Begin Cooking

    Roast the cauliflower in a preheated oven set to 375F for 5 to 7 minutes or until cooked through.

    Top Your Cauliflower Nachos

    After the cauliflower has cooked through, top them with the rest of the vegetables, pork, and cheese. Add the chilies or jalapenos on the side and put the dish back into the oven.

    Continue cooking for 10 to 12 minutes or until all of the cheese has melted.

    Serve immediately with guacamole, sour cream, or salsa!

    • 1 ½ Cups Low Carb Pulled Pork
    • 2 Heads Cauliflower cut in florets, combined weight about 700 grams
    • 2 Small Tomatoes chopped
    • 1 Medium Green Bell Pepper chopped

    • 2 Teaspoon Low Carb Taco Seasoning
    • ½ Cup Parmesan
    • 1 Cup Freshly Grated Mozzarella Cheese

    Instructions

    • In a baking sheet lined with slightly greased parchment paper, spread cauliflower florets. Brush lightly with olive oil. Season all sides with low carb taco seasoning. Opt to add salt and pepper.
    • Roast cauliflower in a preheated oven at 375°F for 5 to 7 minutes.
    • Top cauliflower florets with pulled pork, tomatoes, bell pepper, parmesan and mozzarella cheese. Add chillies on the side. Return to oven and bake for 10 to 12 minutes or until cheese has melted.

      Hubbs and I have have been doing similar for years. It is SO good. Personally, the key is to get the cauliflower to brown tho BEFORE adding those toppings. More like 15-20 mins. Almost caramelized. It really does something amazing to cauli.
