Fudge is one of my most favorite low carb treats. But, I don't make it that often because it's so good that it's hard for me to watch my portions.
To treat myself on Mother's Day, I made cheesecake brownies and this mint chocolate chip fudge. It took me a couple tries to get the texture of this fudge just right, but I nailed it on the second try.

One of the items I purchased in my last order was the Low Carb Sweetened Condensed Milk Mix. The bag has been sitting in my pantry for over a month so I decided to break it open and use it to make sugar free low carb mint chocolate chip fudge.
I didn't bother to actually use the mix to make condensed milk first. Instead, I added the dry mix in with a couple of the ingredients called for on the bag to make the condensed milk.
On my first try, I added the full amount of water called for on the bag and the fudge came out way too soft.
So, on my second try I only used half the water and used SweetLeaf vanilla cream flavored stevia drops so I could omit the vanilla extract.
I also increased the amount of whey protein to a full scoop. The second batch resulted in a firmer fudge that had a texture similar to what you'd get using regular sweetened condensed milk.
You may be wondering what the ingredients are in LC Foods Sweetened Condensed Milk mix.
The great thing is that all the product labels are available on the LC Foods website so you can see the full ingredient list as well as nutritional information for each product.
The LC Foods Sweetened Condensed Milk mix contains the following ingredients: milk protein isolates, whey protein isolates, Inulin (chicory root) fiber, natural vegetable & plant gums, salt, organic stevia rebaudiana leaf extract, natural luo han guo monk fruit extract.
I suppose you could come up with your own mix for low carb sweetened condensed milk using the same or similar ingredients. It would take some experimenting to get it just right, though.
Personally, I wouldn't bother. LC Foods has already done all the testing with their wonderful low carb products. So, what are you waiting for? Go and check out the LC Foods website.

Mint Chocolate Chip Fudge
Ingredients
- 4 ounces cocoa butter
- ¼ cup LC-Sweetened Condensed Milk mix
- 2 tablespoons water
- ¼ cup heavy cream
- ¼ cup low carb sugar substitute
- ½ teaspoon vanilla stevia drops
- 1 scoop unflavored whey protein 23 grams
- 1 teaspoon peppermint extract
- ½ teaspoon spinach powder optional
- ¾ cup sugar free chocolate chips divided
Instructions
- Line a small rectangular container with parchment paper. I used a 6x6 storage container
- In double boiler bowl, over pan of simmering water, melt together cocoa butter, condensed milk mix, water, heavy cream, and Swerve sweetener.
- Remove bowl from heat and add stevia, whey protein powder, peppermint, and spinach powder (if using).
- Let cool for a couple minutes and then fold in ½ cup of the chocolate chips. The chips should melt as you fold creating chocolate swirls.
- Pour fudge mix into prepared container. Press remaining ¼ cup chocolate chips on top.
- Cool fudge in the refrigerator until firm. Cut into squares. Store leftovers in airtight container in refrigerator.
