    If you are looking for an easy soup recipe, then I have just the thing for you. It has the perfect balance of salty and umami flavors thanks to the chicken broth and soy sauce!

    It's a great appetizer to eat before a homemade Chinese food dish (like baked sweet and sour chicken) or enjoy it with some cauliflower fried rice for lunch.

    I love this new way to make drop soup that is low in carbs. Once you make this delicious soup at home, you'll never want to go back to takeout again!

    For starters, I used only whole ingredients. There isn't any yellow food coloring or corn starch, so it is perfect to eat on the keto diet.

    You'll also really love how easy it is to customize the soup to make it taste just how you want it to. I didn't use any toasted sesame oil, but you can add a little bit to give it a bolder flavor.

    Ingredients

    Soup Broth

    I used chicken broth as the base in this egg drop soup. You can save yourself time and just use a can of chicken broth or make your own.

    You can use either chicken broth or chicken stock in your soup.

    All the flavor for this soup recipe comes from the simmering broth.

    Tip: If you want it to be vegetarian, use vegetable broth!

    Vegetables

    I kept the recipe really simple and only used two vegetables - mushrooms and green onions. You don't usually see more vegetables than those in this kind of soup recipe.

    But, if you'd like, you can also add in some carrots for a bit of sweetness.

    Spices

    The best spices for egg drop soup are soy sauce, ground ginger, and white pepper. You can also add garlic powder if you want it to taste bolder.

    The green onions add lots of flavor, so you really don't need many more spices than these!

    Oils and Sauces

    For keto and low-carb diet, use gluten-free soy sauce or coconut aminos. I did not use sesame oil, but you can add a few drops if you want to add a layer of nutty flavor.

    Eggs

    And, of course, you'll need some eggs for this egg drop soup recipe. Make sure you use beaten eggs!

    Quick tips

    • Slowly pour the eggs into the boiling broth. As you pour the eggs, slowly stir the broth. This will create beautiful egg ribbons.
    • Egg drop soup can be stored in the refrigerator for up to 3 days.
    • Serve immediately - the soup tastes better when it is fresh and hot.
    • For an even better experience, serve it in a warm bowl.

    Instructions

    Heat The Broth

    Add everything except the eggs to a saucepan. If you want it to have a bit more bite, add more ground ginger and garlic powder. Adjust the spices to your liking.

    Then, heat it all over medium heat.

    The secret to perfect egg drop soup is to make sure you have really hot broth. So, I like to bring it to a rolling boil.

    Add Whisked Eggs

    Next, whisk the eggs really well. Then, slowly pour them into the chicken broth mixture. I used 3, but you can add more eggs if you want.

    As you add the eggs, keep stirring slowly so that they cook into thin ribbons.

    You can also garnish it with thinly sliced green onions if you want. Just make sure to serve it hot.

    This is one of my favorite healthy recipes because it goes with almost anything. I like to enjoy this egg drop soup with egg roll in a bowl for an easy low-carb lunch.

    Or, enjoy it for dinner with sweet and sugar-free keto teriyaki chicken. It is also the perfect starter for beef and broccoli!

    Add some cauliflower fried rice on the side - it also has egg in it.

    No matter what you eat with this soup, it will taste delicious!

    • 4 cups Chicken broth
    • 1 teaspoon Ginger paste
    • 8 ounces Sliced mushrooms
    • 1 tablespoon Soy sauce

        No need for mushrooms. Either just leave them out or replace with spinach or another keto vegetable. You can use tofu too.
