These keto white chocolate truffles have a soft, creamy filling covered in rich dark chocolate for an indulgent candy treat. They make any occasion a little more special!

Chocolate truffles are the perfect special occasion candy. They’re so delicious, and they always make me think of the holidays or Valentine’s Day.

Of course, I stay away from store-bought versions that are packed with sugar, carbs, and fillers. That’s why I created this easy recipe for keto white chocolate truffles!

They’re perfect whether you’re celebrating something or just want a yummy low carb treat. Coconut butter and mascarpone cheese make the filling soft and creamy, and the dark chocolate outer shell is so rich and delicious. 

Best of all, there is only 1 gram net carb per truffle! You can whip up a batch in a few simple steps, and you’ll end up with 28 total. So plenty to share… but only if you want to!

If you love white chocolate desserts, you have to give these truffles a try.

How to make keto white chocolate truffles

The steps to make these decadent candies are quite simple. Just keep in mind that the filling needs to set in the refrigerator for a while. So be sure to start the recipe a few hours before you want to eat them.

First, we’ll make the white chocolate filling:

  1. In a small saucepan over low heat, mix together the coconut butter, mascarpone cheese, and powdered sweetener.
  2. Once the mixture is well combined, remove from heat and stir in the whey powder and vanilla extract.
  3. Using an electric mixer, beat the filling until well combined.
  4. Scoop the mixture and form into balls, using your hands if necessary, then place them on a non-stick surface. You should end up with 28 round truffle fillings.
  5. Place the fillings in the refrigerator for several hours to chill.

Once the fillings have set, we’ll prep the chocolate coating and finish making the truffles:

  1. Melt the baking chocolate, cocoa butter, and powdered sweetener over low heat or with a double boiler until the ingredients are completely melted.
  2. Remove the chocolate mixture from heat and stir in the stevia.
  3. Take the truffle fillings out of the refrigerator. One by one, dip a chilled ball of filling into the melted chocolate until completely coated, then set it on a non-stick surface to harden. 
  4. Repeat until all truffles have been dipped into the chocolate coating. You can use any leftover chocolate to drizzle over the truffles if desired. 

Now you have perfect keto chocolate truffles to share with someone you love… or enjoy all to yourself! 

Make sure to store your truffles in the refrigerator until you’re ready to enjoy.

Choosing the flavor for low carb truffles

I love white chocolate candy. In fact, you’ll find white chocolate in quite a few of my recipes, like my sugar free white chocolate, keto white chocolate fat bombs, and white chocolate almond bark.

However, if you want something a little different for these truffles, you can easily change up the flavor. Try swapping the vanilla extract with a different flavor, like almond or even peppermint. 

You could also add additional ingredients. I’m thinking of including some unsweetened dried coconut or cocoa powder!

Keto White Chocolate Truffles Candy

Ingredients

FILLING:

  • ½ cup coconut butter see note
  • ½ cup mascarpone cheese
  • ⅓ cup Sukrin Melis or other powdered sweetener
  • 1 scoop unflavored whey protein about ⅓ cup
  • 1 teaspoons vanilla extract

CHOCOLATE COATING:

  • 4 oz unsweetened baking chocolate
  • 1 oz cocoa butter food grade
  • 3 tablespoons Sukrin Melis or other powdered sweetener
  • ⅛ teaspoon stevia concentrated powder
US Customary - Metric

Instructions

FILLING:

  • Mix together coconut butter, mascarpone cheese, and powdered sweetener on low heat.
  • Remove from heat and stir in whey powder and vanilla extract.
  • Using an electric mixer, beat filling until well combined.
  • Scoop into balls and set on non-stick surface. Shape into balls with hands, if desired.
  • Place in refrigerator for several hours to chill.

CHOCOLATE COATING:

  • Melt baking chocolate, cocoa butter, and powdered sweetener over low heat or double boiler until melted completely.
  • Remove chocolate mixture from heat and stir in stevia and vanilla extracts.
  • Dip chilled balls into chocolate and set on non-stick surface to harden. Drizzle with extra chocolate if desired.
  • Store in refrigerator.

Notes

To make coconut butter, place about 2 cups unsweetened dried coconut flakes into food processor and process until butter forms (about 7-8 minutes).
Ways to change the flavor:
  • Try swapping the vanilla extract with a different flavor, like almond or even peppermint.
  • Add additional ingredients like unsweetened dried coconut or cocoa powder to the filling.

    Just made a second batch of these amazing truffles, this time adding white chocolate and raspberry Flavor drops. OMG, they are divine!!

    Can you clarify the nutrition please - it says per 1g, I'm assuming that it means per 1 chocolate? Are they really only 0.8g carbs? They taste so so decadent!

      Yes. That's the nutritional information that was estimated. About 1g net carb per truffle.

    Hi Lisa,
    The KETO WHITE CHOCOLATE TRUFFLES CANDY RECIPE sounds like it would taste great. Only thing is, I can't use stevia concentrated powder. I can't use stevia at all, it hurts my stomach. Is there something else I could use? And what amount of the alternate would I use instead?

      A pure monkfruit powder extract is a good one-for-one substitute. You can also try one of the others listed in the keto sweetener guide.

    Could I used vanilla protein powder and leave out vanilla extract , only I don't have unflavoued protein powder

      You could, but you'd want to reduce or eliminate the sweetener as well.

      You can try that. I've had success in other recipes using cocoa butter.

    These look amazing. In your article you explained a lot of your process so I hope you won't mind if I ask- what is the purpose of the whey protein? Could it be left out?

      The whey protein powder is a bulk ingredient needed when removing sugar from a recipe.

    Is there anyway to make this without coconut butter?

    Coconut makes me nauseous so as much as i want to try these i can't unless there is a sub for it.

      You could try coconut oil or pureed dried coconut. Ghee should work too. Regular butter might be too soft.

        Hi 🙂 I’m from the uk and prefer working with grams over cups, when I convert the measurements to metric on the website it has 2 different weights for the coconut butter and the mascarpone.. don’t know if I’m being dumb here but are they supposed to be equal amounts? The us version is 1/2 cup for both. Also would collagen powder work instead of whey protein? Thanks 🙂

        Sorry about that. When I can, I'll add a gram measure next to the ingredient as the conversion link isn't always the best. However, the weights for coconut butter and mascarpone would be different even though they are both half cup. It's the same volume but the cheese is heavier per volume.

    I just found your recipe the other day and finally made "my" version of it. I added some Limezest & Limejuice and made coconut-lime-pralines from ist.
