    With the busy school year starting, it’s time to get out those quick and easy dinner recipes. I came up with a low-carb chicken cordon bleu casserole using convenient ingredients in just a short amount of time!

    It took me less than thirty minutes to bake and prepare this delicious casserole that looks and tastes like a gourmet meal. It’s seriously one of the best chicken recipes to make for a delicious dinner tonight!

    This chicken cordon bleu recipe is perfect to make for your family as your schedule becomes super busy. It’s a very easy recipe to throw together without having to think much about it.

    If you are a really busy parent (or even a busy adult with jobs and other responsibilities), this family-friendly meal is exactly what you need. You don’t even have to make stuffed chicken breasts! There isn’t a lot of measuring or food prep necessary. It’s all made in one dish.

    I found some shortcuts that sped up my time with food prep. I just know you are going to love them too!

    Ingredients

    There are just a few simple ingredients in this easy chicken cordon bleu casserole. Here’s what you need:

    Meat

    To cut prep time, I used one package of black forest deli ham but you can use any ham you like. A ham steak works great too. Just make sure it doesn’t have sugar.

    I also used a bag of frozen pulled chicken breasts from the freezer section to make prep time easier. If you are planning ahead, you can meal prep shredded chicken in advance and use that! Or just shred some rotisserie chicken for last minute.

    I love that the meat is pre-cooked, which saves time in the kitchen when making this chicken cordon bleu recipe.

    Cheese sauce

    To make the creamy sauce, I used a combination of mayonnaise, heavy cream, cream cheese, parmesan cheese, and swiss cheese.

    Yes, it’s a very rich and filling recipe!

    Spices

    Use your favorite spices in this cheesy casserole. I used garlic powder, black pepper, and chicken bone broth.

    And, you can’t forget the salt and pepper!

    Crunchy topping

    This is optional, but I used come crushed pork rinds to add a bit of crunch on top of the casserole. They are a great low-carb option to crispy bread crumbs. You can also make your own seasoned keto panko breadcrumbs!

    For a little extra flavor, pour a little melted butter over the topping!

    Quick tips

    • Substitute shredded cheese. The swiss cheese doesn’t needed to be shredded. You can also use cheese slices!
    • If you use chicken breasts that aren’t pre-shredded, make sure you cut the chicken breasts into strips.
    • Use pork rinds for some extra crunch. Add plain crushed pork rinds over the casserole for a crunchy topping and to add the “fried” feel of classic cordon bleu.
    • Add melted butter. Melt a little butter and pour it over the pork rinds. This will give the topping extra flavor.

    This is a really simple recipe to throw together last-minute. You basically combine all the ingredients and then bake them. It’s so easy to make chicken cordon bleu! Here’s how:

    Make The Cream Sauce

    First, mix together the mayonnaise, heavy cream, and cream cheese. Then, stir in the parmesan cheese, spices, and swiss cheese.

    This will be the base sauce.

    Add The Meat And Broth

    Next, stir in the chicken breasts, ham, and chicken broth or chicken stock.

    Bake The Casserole

    Add the ham and cheese mixture to the baking dish. Sprinkle on your crunchy topping and drizzle melted butter on top.

    Bake at 350°F for about 25 minutes until you have golden brown. Remove the baking dish from the oven and allow to cool slightly.

    Serve warm and enjoy! It’s absolutely delicious.

    This is such a wonderful recipe that almost any low-carb side dish you make will taste delicious with it!

    My go-to is some sort of roasted veggies (like roasted broccoli) and some "mashed potatoes", really just creamy cauliflower mash.

    You can never go wrong with some green beans almondine. The almonds have a really yummy nutty flavor that pairs well with the creamy ham and cheese.

    For something light and tasty, make some oven-roasted asparagus! It's easy and scrumptious.

    Why it works

    Traditionally, a classic chicken cordon bleu recipe is stuffed chicken breasts wrapped around ham and cheese. Then, it’s breaded with a breadcrumb mixture (like panko crumbs) and deep fried.

    But, that’s not very keto-friendly!

    So, I took the classic flavors of a chicken cordon bleu recipe- chicken, ham, and swiss – and combined them into a casserole form that will feed your entire family. I even incorporated the “deep fried” part of the traditional dish by using pork rinds.

    You are going to love this low-carb recipe because it doesn't call for cream of chicken soup or egg noodles like regular versions!

    Before I share the entire recipe card, there are some questions I want to answer.

    How long does this casserole take to prep?

    The prep time for this easy low carb meal should be less than five minutes. You'll just need to combine all the ingredients into a mixing bowl.

    What sized casserole dish do I need?

    Once everything was mixed together, I just spread it out into a 9x13-inch baking dish. Honestly, you can probably use any baking dish size that you have in your cabinet, even a shallow dish. Since the meat is already pre-cooked, you are basically just heating it up, so the cheeses all melt together. This will work no matter what size of dish you use.

    What is a keto-friendly way to add a crunchy topping for casseroles?

    I opted to top off the casserole with crushed pork rinds. You could use seasoned pork rinds if you already have some made. I find that storing crushed pork rinds in the freezer is not only convenient but also eliminates a lot of the pork taste. You can also make your own seasoned low-carb breadcrumbs!

    How long does this keto casserole take to cook?

    Since the meat is pre-cooked, it should only take 20-25 minutes for the chicken cordon bleu casserole to heat fully and begin to brown. With less than 30 minutes from start to finish, you won't be stressing to feed your family during the busy back-to-school season.

    • ¼ cup mayonnaise
    • ¼ cup heavy cream
    • 8 ounces cream cheese softened
    • ¼ cup Parmesan cheese
    • ½ teaspoon garlic powder

    Notes

    A couple commenters noted that the casserole was watery. The broth is not necessary and can be left out to reduce liquid.
    Additional tips:
    • The swiss cheese will be chopped, but you can use shredded if you have it.
    • Make sure you cut the chicken breast into strips or use the pre-cooked meat.
    • Add some plain crushed pork rinds over the top as this gives it the crunchy topping.

      All though I cut my Swiss thinish, it did not melt other than that it’s an amazing recipe! Almost like an Alfredo

      Excellent rendition of a favorite recipe. I used the Instant Pot to cook seasoned chicken thighs, shredded the meat, then used it for the casserole. Very rich, so it was self-limiting. I used the pork rinds and added a bit of melted butter over top. It was wonderful.
