I’ve been seeing a lot of great new holiday recipes floating around. I know Thanksgiving is a month away, but I’ve been focusing on every day meals here rather than coming up with some ideas for the holidays.
I’d love to get some cute Halloween treats put together and share, but I just haven’t had time think of something creative to make. It doesn’t help that I always lose my train of thought when I’m home because a have a crazy two year old running around.
In fact, it often takes me about 20 times longer to do something than it should because I’m always getting distracted by my daughter. That’s why I try to keep things as simple as possible right now.
I’m always looking for quick and easy ground beef skillet dinners that I can prepare in a jiffy after work. I found a Hamburger Beef Stroganoff recipe at Simply Recipes and thought it would make a perfect weeknight meal. I was right.
It was really delicious so I decided to share my version here. I didn’t change much, I just left out the onion, used regular mushrooms, and simplified the directions.
That’s kind of a big one for me. I don’t like when the recipe instructions are overly wordy because I find I lose my place easily when cooking. That’s why I rewrote them in much shorter steps.
This dish only took about 15-20 minutes from start to finish. I did have to wait for the ground beef to thaw in a bowl of cold water first, though. But, I spent that time playing with my daughter when I came home from work.
How to make keto beef stroganoff with ground beef
To start, I added a pat of butter and then cooked a little garlic in it. Then I added the ground beef to the skillet.
Once the meat was fully browned, I removed it from the pan and started to cook the mushrooms. I happened to have a bottle white cooking sherry so I added that to the pan with mushrooms rather than water. The wine certainly adds more flavor, but water is fine too.
Once the wine reduced, I added sour cream and a little paprika. Then, the sauce was heated on low heat.
After heating the sour cream up slightly, a little lemon juice was stirred in along with the meat. It’s pretty much done at this point.
I just happened to have fresh parsley on hand so I sprinkled a little bit of it on top. I also had a spaghetti squash on hand that was the perfect base to serve the low carb hamburger beef stroganoff on.
You could also use spiralized zucchini instead of the squash strands. I really enjoyed the taste of this super easy hamburger stroganoff and my daughter did too.

Hamburger Beef Stroganoff

- 2 tablespoon butter
- 2 cloves garlic minced
- 1 pound ground beef
- salt and pepper
- 8 ounces mushrooms sliced
- 1/3 cup dry white wine or water
- 1 1/4 cups full fat sour cream
- 1/4 teaspoon paprika
- 1 teaspoon lemon juice
- 1 teaspoon dried parsley or tablespoon fresh (chopped)
- Melt 1 tablespoon butter in pan then add garlic and salute until garlic is golden.
- Add the beef, season with salt and pepper, then cook until browned. Remove beef from pan and set aside.
- Melt another tablespoon of butter to pan. Add mushrooms and wine/water and cook until liquid is reduced by about half and mushrooms are softened.
- Remove pan from heat and mix in sour cream and paprika. Return pan to low heat.
- Stir in lemon juice and and meat. Add more seasoning if needed.
