If you are looking for an easy soup recipe, then I have just the thing for you. It has the perfect balance of salty and umami flavors thanks to the chicken broth and soy sauce!

It's a great appetizer to eat before a homemade Chinese food dish (like baked sweet and sour chicken) or enjoy it with some cauliflower fried rice for lunch.

I love this new way to make drop soup that is low in carbs. Once you make this delicious soup at home, you'll never want to go back to takeout again!

This awesome recipe could not be easier - and it tastes just like the kind you would order from your favorite Chinese restaurant.

 Why you'll love it

There is so much to love about this egg drop soup recipe!

For starters, I used only whole ingredients. There isn't any yellow food coloring or corn starch, so it is perfect to eat on the keto diet.

You'll also really love how easy it is to customize the soup to make it taste just how you want it to. I didn't use any toasted sesame oil, but you can add a little bit to give it a bolder flavor.

Making keto egg drop soup is easier than you might think. It's a simple recipe that is perfect for beginner cooks coming together in just minutes.

You'll soon see why this is one of my favorite soup recipes of all time!

Ingredients

All the exact ingredient amounts are in the printable recipe card at the bottom of this post. First, here is a bit more information about what I used in this tasty soup.

Soup Broth

I used chicken broth as the base in this egg drop soup. You can save yourself time and just use a can of chicken broth or make your own.

You can use either chicken broth or chicken stock in your soup.

All the flavor for this soup recipe comes from the simmering broth.

Tip: If you want it to be vegetarian, use vegetable broth!

Vegetables

I kept the recipe really simple and only used two vegetables - mushrooms and green onions. You don't usually see more vegetables than those in this kind of soup recipe.

But, if you'd like, you can also add in some carrots for a bit of sweetness.

Spices

The best spices for egg drop soup are soy sauce, ground ginger, and white pepper. You can also add garlic powder if you want it to taste bolder.

The green onions add lots of flavor, so you really don't need many more spices than these!

Oils and Sauces

For keto and low-carb diet, use gluten-free soy sauce or coconut aminos. I did not use sesame oil, but you can add a few drops if you want to add a layer of nutty flavor.

Eggs

And, of course, you'll need some eggs for this egg drop soup recipe. Make sure you use beaten eggs!

Please note: Check out the recipe card at the bottom for a full list of ingredients used to make this low-carb recipe.

ingredients including eggs, soy sauce, ginger paste, chicken broth, mushrooms and green onions

Quick tips

  • Slowly pour the eggs into the boiling broth. As you pour the eggs, slowly stir the broth. This will create beautiful egg ribbons.
  • Egg drop soup can be stored in the refrigerator for up to 3 days.
  • Serve immediately - the soup tastes better when it is fresh and hot.
  • For an even better experience, serve it in a warm bowl.

Instructions

Here are a few more tips about this delicious Chinese soup. The full recipe for the keto egg drop soup is in the printable recipe card at the bottom of this pot!

Heat The Broth

Add everything except the eggs to a saucepan. If you want it to have a bit more bite, add more ground ginger and garlic powder. Adjust the spices to your liking.

Then, heat it all over medium heat.

The secret to perfect egg drop soup is to make sure you have really hot broth. So, I like to bring it to a rolling boil.

Add Whisked Eggs

Next, whisk the eggs really well. Then, slowly pour them into the chicken broth mixture. I used 3, but you can add more eggs if you want.

As you add the eggs, keep stirring slowly so that they cook into thin ribbons.

adding the ingredients to pot

That's it! See? Making egg drop soup is easy! This simple soup is ready to eat.

You can also garnish it with thinly sliced green onions if you want. Just make sure to serve it hot.

️ Serving suggestions

This is one of my favorite healthy recipes because it goes with almost anything. I like to enjoy this egg drop soup with egg roll in a bowl for an easy low-carb lunch.

Or, enjoy it for dinner with sweet and sugar-free keto teriyaki chicken. It is also the perfect starter for beef and broccoli!

Add some cauliflower fried rice on the side - it also has egg in it.

No matter what you eat with this soup, it will taste delicious!

FAQs

Before I get to the printable recipe card for this keto egg drop soup, here are some questions people often ask about how to make it. If you don't see your question in this list, please leave it in the comments.

How do you store egg drop soup?

Store this soup in the refrigerator in an airtight container like a mason jar to prevent leaks. It will taste great up to 3 days later. Add fresh green onions on top and it tastes just like the day you made it!

Can you freeze egg drop soup?

Although it is possible, I do not recommend freezing keto egg drop soup. It would affect the texture of the soup too much.

How many carbs are in this easy egg drop soup?

There are only 3g net carbs in a small bowl of this soup. This is because ingredients like chicken broth and green onions don’t have many carbs in them. In fact, this egg drop soup recipe is naturally low in carbs!

Is this a gluten-free soup recipe?

Yes, almost all egg drop soup recipes are gluten-free. You just have to watch out for gluten in soy sauce. You can use coconut aminos (or gluten free soy sauce) in this soup recipe, and then you will know it is safe to eat.

How do you give a thicker consistency?

Egg drop soup is supposed to be a very thin soup. Chicken stock has a thicker consistency compared to chicken broth, so try to use that instead.

Is this soup a complete meal?

No, this soup is not a complete meal. So when you make egg drop soup, I suggest serving some kind of meat and more veggies on the side.

Note: Check out this keto food list to answer more of your questions.

I’d rather not buy ginger paste for a single recipe. I can use granulated ginger or the frozen cubed ginger that I find at Trader Joe’s. What can I sub?

    Thank you very muchO

Really really good! Very easy to make. I did omit mushrooms just because I've never gotten egg drop soup from a restaurant that had it and I wanted to compare the flavors. I did notice this version is very thin (still very tasty!)

I wonder if plain gelatin was added if it would give it a thicker consistency? Though I'm not sure if that is keto.

What can I use instead of mushrooms which I don't eat?

No need for mushrooms. Either just leave them out or replace with spinach or another keto vegetable. You can use tofu too.
