    Cucumber Sandwiches with Cream Cheese

    My husband’s great-aunt started an annual summer tea party for the kids. Because there's always great finger foods, even the adults look forward to attending the event.

    The finger sandwiches are always a hit. I especially like the ones made with olive and cream cheese.

    But this year I decided to make low carb ones with a creamy cucumber filling. Next year I may try using my tuna egg salad as filling too.

    The Cucumber Mixture

    The best cream cheese and cucumber sandwiches recipe uses grated cucumber in the filling. But you'll need to remove most of the liquid before using.

    You can use any type of cucumber in the recipe. However, English cucumbers are preferred. That’s because they have very small seeds and thinner skin.

    Blending the cream cheese with a little sour cream creates a spreadable mixture. Then you'll add garlic powder, celery salt, regular salt, and ground black pepper for seasoning.

    I’ve also had success replacing the cream cheese and sour cream with an equal amount of Kite Hill dairy-free spread. So that’s a great option for people who need to avoid dairy.

    Low Carb Cucumber Sandwiches with Bread

    For the bread in these cucumber sandwiches with cream cheese, I used my almond flour bread recipe. You only need 5 simple ingredients plus salt to make the bread. And because there's just 2 net carbs per slice it's ideal for any ketogenic diet!

    I got 14 bread slices from the loaf but I didn’t use the two end slices. Therefore, I was able to get about a dozen finger sandwiches all together with some filling left over.

    You can also use any of these keto breads for low carb sandwich recipes:

    • Paleo Bread (made with almond butter)
    • Soul Bread (a sandwich bread with less than a carb per slice)
    • Basic Low Carb Bread (a basic quick bread combining two flours)
    • Coconut Flour Bread (another easy quick bread)
    • Pork Rind Flat Bread (add in some herbs for a great appetizer)
    • Flax Bread (made with a combination of coconut flour and flax)
    • Keto Buns (a great all-purpose bread)

    Regular Bread Options

    If it’s not a keto tea party and the guests aren’t all low carb, I like to include some regular sandwiches as well. So I’ll just buy a loaf of bread for those who aren’t following a keto diet.

    When making finger sandwiches, I avoid really soft bread as it’s difficult to cut them neatly. Pepperidge Farm sells a thinly sliced white bread that works well for tea sandwiches. Stiffer breads like rye or pumpernickel work great too, but they have a stronger flavor than white bread.

    If the bread you have is too soft, you can always lightly toast it so it holds together better.

    No Bread Cucumber Sandwiches

    There’s no need to use bread when making keto cucumber sandwiches. You can make them as lettuce wraps or spread the filling on cucumber slices.

    Serving Cucumber Sandwiches with Cream Cheese

    Although these low carb sandwiches are the perfect addition to a tea party, you can enjoy them in other ways too. And they aren’t just for those following a ketogenic diet.

    Here are other ways to serve them:

    • Keto snacks on the road
    • Along with a cup of afternoon tea
    • As part of a low carb lunch
    • With dinner as an appetizer or side dish

    Low Carb Cucumber Cream Cheese Sandwiches

    A creamy cucumber filling between lightly toasted bread makes this delicious low carb cucumber finger sandwich. Can be made with any low carb or gluten free bread.

    Ingredients

    • 3 oz cream cheese
    • 1 medium cucumber
    • 1 Tablespoon sour cream
    • ⅛ teaspoon salt
    • 1 dash pepper
    • ⅛ teaspoon dash celery salt
    • ⅛ teaspoon garlic powder
    • almond flour bread or other low carb bread

    Instructions

    • Grate cucumber and let drain until most of the liquid is gone.
    • Combine the cream cheese, medium cucumber, sour cream until smooth. Season with salt, pepper, celery salt and garlic powder.
    • Cut the low carb flax bread squares in half through the middle height of the slice to make them thinner. Spread cucumber mix on bottom slice and cover with top slice. Cut in half to make finger size.

    Notes

    The filling can be made dairy-free by using a non-dairy cream cheese style spread in place of the cream cheese and sour cream. I've used 4 ounces of Kite Hill plain spread instead of 3 ounces cream cheese and 1 tablespoon sour cream with excellent results.

      Hello, I tried making the cucumber cream cheese filling. How do you drain the water from the cucumbers after they are grated?

        I just put them in a fine mesh strainer over a bowl and press them down to squeeze the liquid out.

      So easy go to Keto lunch. I was searching for a recipe that I can pack for lunch with me while commuting. I mean what else you need just pack some slices of it and bulletproof coffee with you.

      Can you make the flax seed bread without sugar so it's more savory?

        I never use sugar when I make the bread. It looks like the original recipe changed and now has sugar added. You can also use the keto bread.
