What kind of pork cooks best in an Instant Pot?
For this BBQ pork chops recipe, I recommend using thick-cut bone-in pork chops. To prevent them from drying out, they should be at least 1-inch thick, if possible. That being said, you can use boneless pork chops if you prefer them. However, they will probably not take as long to cook through. You can reduce the pressure cooking time by one or maybe two minutes. I don’t recommend reducing the time by more than that.
Also, to avoid risk of food poisoning, I suggest using a food thermometer to test the internal temperature of the chops. Pork is considered safe to eat when the internal temperature reaches 145 degrees Fahrenheit.
If the temperature hasn’t reached that point, just place them back into the Instant Pot. Put the cover back on and cook for a couple of minutes longer.
Can I cook pork chops frozen?
The Instant Pot is a busy cook’s best friend. Yes, you can use frozen pork chops for this Instant Pot pork chops recipe.
However, keep in mind that you are cooking very cold meat. As a result, the frozen pork will increase the time it takes for the machine to come to pressure. You will also need to add a few minutes to the cooking time.
Is BBQ sauce bad for keto?
If you love condiments that are typically packed with sugar, like barbecue sauce, I have great news! You can enjoy the Instant Pot BBQ pork chops guilt-free!
It can be tough to find a good keto barbecue sauce in the stores. But, it's so simple to make your own, using common ingredients you likely have in your kitchen.
The best news is, it doesn’t take much time at all to make this homemade low carb BBQ sauce. That being said, if you would rather buy it, there are some low carb and keto BBQ sauces available.

The bbq sauce is really delicious on the Instant Pot pork chops, but there are other great ways to use it, too. You can add it to meatloaf, burgers, grilled chicken. Or use it as a dipping sauce for appetizers. All-around, it’s just a fantastic condiment to have handy in your fridge.
How long does it take to cook pork chops in an Instant Pot?
Before you can pressure cook the pork chops, you will want to sear them first. Fortunately, the Instant Pot sauté function makes it quick and easy to do.
If you don’t sear the chops before pressure cooking them, they are likely to lose moisture. As a result, you will end up with pork chops that are dry and chewy. By searing the chops first, you will lock the moisture inside of the meat. This will give you pork chops that are juicy and delicious!
Start by searing the pork chops for 2-3 minutes per side. At that point, you will deglaze the pot, then add the ingredients. Put the lid on, set it, and forget it! You’re good to go about your business!
Since the Instant Pot will already be hot, it shouldn’t take very long for it to build pressure. Most likely, a few minutes. Once it does come to pressure, the pork chops will cook for 5 minutes. You will follow that up with a 10 minute slow pressure release.
So, in total, it will take roughly 25-30 minutes to make the Instant Pot BBQ pork chops recipe. And they go well with any keto BBQ side dishes. You can also make keto pulled chicken with the BBQ sauce.

Instant Pot Pork Chops with BBQ Sauce (Keto)

Ingredients
- 2 tablespoons olive oil
- 4 medium pork chops about 12 ounces
- ½ cup water
- 1 batch low carb BBQ sauce uncooked
Instructions
- Heat olive oil in Instant Pot on sauté setting.
- Brown meat in the hot oil. Set aside on a plate.
- Deglaze pan with the water. Then add in a small amount of the prepared BBQ sauce. Top with 2 pork chops, then half the remaining sauce. Add the other 2 pieces and top with the remaining sauce.
- Cook on high pressure for 5 minutes.
- When cooking time is reached, allow for a 10 minute pressure release before opening the lid.
- Serve hot, topping each pork chop with the BBQ sauce.

There should be very little difference in time. Maybe just increase the natural pressure release to 15 minutes?
