For an easy keto meal, try ground beef stroganoff. This hamburger meat recipe comes together in one pan for a quick and delicious dinner. It packs all the flavor of the traditional dish without the extra carbs!

I love finding new recipes for one-pan dinners. When you don’t have a lot of time, they’re great for getting easy, delicious meals on the table.

Skillet ground beef stroganoff is a perfect example!

This dish is made with budget friendly hamburger meat and a super creamy sauce packed with flavor. It tastes like something that takes all day to cook.

But it can actually be ready in 20 minutes or less! And everything comes together in just one skillet. This makes both cooking and clean-up so easy.

The traditional version dredges beef in flour before frying, then serves it in a creamy sauce over egg noodles.

To make a keto stroganoff, I simply eliminated the flour and served it over low-carb noodles instead!

Step-by-Step Directions

This dish is so easy to make because everything comes together in one pan. This is also great for infusing the whole meal with flavor!

Just follow these simple steps:

  • Cook the hamburger meat. Melt 1 tablespoon of butter in a pan, then add the minced garlic and sauté until golden. Add the ground beef to the pan and season with salt and pepper. Cook the beef until browned, then remove from the pan and set aside.

  • Prepare the creamy sauce. Melt another tablespoon of butter in the pan. Add mushrooms and wine (or water), then cook until liquid is reduced by about half and the mushrooms are softened. Remove the pan from heat and mix in the sour cream and paprika.

  • Combine sauce and beef. Return pan to low heat, then stir in lemon juice and cooked ground beef. Adjust seasonings to taste if needed then remove from heat.

Your hamburger stroganoff is ready to enjoy! I like to sprinkle mine with chopped parsley right before serving.

Serving Suggestions

The traditional version of this Russian dish is served over egg noodles. Thankfully, there are plenty of low carb alternatives.

One of my favorite options is to serve the stroganoff over spaghetti squash. I like to use Instant Pot spaghetti squash as it's the easiest cooking method I've found.

For a different vegetable noodle, you could also try spiralized zucchini noodles.

Another option is to use your favorite brand of low carb noodles. There are more and more options popping up all the time! Simply cook them according to the package directions.

Finally, you could whip up a batch of my keto egg noodles! They’re made from egg yolks, cheese, and spices for a super low carb option.

You really can’t go wrong. In my opinion, noodles are just a vehicle for eating sauce. The real star of this dinner is the ground beef stroganoff!

Storing Leftovers

This recipe is for four servings. For me, it’s the perfect amount to feed my family for dinner.

If you do end up with leftovers, they can be stored covered in the refrigerator for 3-4 days. If possible, I recommend storing the stroganoff separately from any leftover noodles.

For longer storage, you could also freeze the hamburger stroganoff in an airtight container. It should stay fresh for several months.

Ingredients

  • 2 tablespoon butter
  • 2 cloves garlic minced
  • 1 pound ground beef
  • salt and pepper
  • 8 ounces mushrooms sliced
  • ⅓ cup dry white wine or water
  • 1 ¼ cups full fat sour cream
  • ¼ teaspoon paprika
  • 1 teaspoon lemon juice
  • 1 teaspoon dried parsley or tablespoon fresh (chopped)

Instructions

  • Melt 1 tablespoon butter in pan then add garlic and salute until garlic is golden.
  • Add the beef, season with salt and pepper, then cook until browned. Remove beef from pan and set aside.
  • Melt another tablespoon of butter to pan. Add mushrooms and wine/water and cook until liquid is reduced by about half and mushrooms are softened.
  • Remove pan from heat and mix in sour cream and paprika. Return pan to low heat.
  • Stir in lemon juice and meat. Add more seasoning if needed.

Notes

To up the flavor (per reader comment) Add a ¼ teaspoon of Dijon mustard, ½ teaspoon of Worcestershire sauce, a dusting of onion powder, a sprinkle of garlic salt, fresh cracked black peppercorn and pink Himalayan salt.

    This was delicious. I sauteed shredded green cabbage with chopped white onion until wilty/cooked down, and then just mixed it in with the stroganoff. Used beef stock instead of wine to increase the beefy flavor. Didn't add lemon juice as I didn't have any on hand. I've really been missing my traditional stroganoff, thank you so very much for this recipe!! 🙂

    Sorry, didn't like this at all, there is three in my family, and no one would finish it. Had to throw the rest away. It was way too bland, not much flavor and I added a ton of extra garlic salt. Oh well, you win some you lose some.

    How can these be keto dishes? The protein % is way too high. Since I have started using these so called keto friendly I have come competely out of ketosis.

    I'm gonna make this tonight but as i was reading instructions i can't see when your suppose to add the parsley. Or do i just sprinkle ot on after its the meal is cooked. It sounds yummy. Cant wait to taste it.

      I usually use ground venison which is very lean. When I use beef, it's grass-fed and not a lot of fat.

    Excellent for my keto diet for nutritional healing of my body.hi fat low carb moderate protein.gone from 326/175 still working on last 20 pounds, much slower now but love being off all pills now. No more diabetes, no more hi blood pressure, no more back and knee problems. I was so against hi fat but I've changed my mind now after seeing results of my blood test, Dr. Very impressed. Again thanks for this wonderfully receipes I put mine over miracle spinach noodles rinsed twice microwaved dried with paper towels put this over strogonoff yum. I also cooked my miracles noodles with home made bone broth.

    I made this recipe tonight and even my picky 6yo gobbled it up. I tweeked a few things to our preference; I minced one red onion and sauteed it with about 5 minced garlic cloves. I doubled the amount of mushrooms and served with sauteed garlic kale, IT WAS AWESOME! Thank you so much for providing such a simple recipe to springboard off of!

    I have been on JumpstartMD, which is a low carb way of eating. The only carbs I get are through fruits and vegetables (2 fruits a day). They use full fat, of course, and lean protein. I've had great success on this diet! This recipe is absolutely perfect for this program. You have to remember, the values are calculated to serve 4 people.

    What is a serving size for this dish?

    I'm following keto and it seems it would fit well as a weeknight dinner - just concerned about the conflicting nutrition info.

      It worked out to about 272 grams a serving. The nutritional data is dependent on actual ingredients used and is just an estimate.

    Made this last night & it was great. The mushrooms held so much of the flavor, that when you ate one, it burst with goodness. Heck, I'd even add more next time. I made this with Greek yogurt instead of sour cream & it worked well. I didn't temper the yog into the meat, so it curdled a bit, but still very good. I will temper it next time.     Maybe this is just personal preference, but I found it way too thick with just the sour cream and reduced wine. It also tasted too much like straight sour cream. I added a little less than a cup of beef broth to thin it out a bit and add another flavor. Thanks for the recipe!

    This looks great! I'm actively trying to lose weight, so the fat content is a bit on the high side for me. Was wondering if anyone ever subbed greek yogurt for the sour cream and had success? Wasn't sure if greek yogurt would hold up to the heat like the sour cream would.

      You could just leave the mushrooms out. It's best to sauté the zucchini for a softer noodle.

    Wow. I look for low carb recipes because I am a newly diagnosed diabetic. I would imagine at least some of the readers are the same, which also means trying to lose weight and watch our cholesterol to get the diabetes under control. That being said, this recipe is ridiculous- can't be called "healthy" by any stretch of the imagination- 125g of fat???? Twice the daily allotment for fat, 75% saturated fat, and over half daily allotment of cholesterol.That's just crazy. I guess no one is trying to lose weight or eat healthy- just worried about carbs and the rest of it is thrown to the wind.

      I'm pretty sure that's the amount of fat in the whole recipe, not per serving. It has to be a mistake. I need to run this one again.

      Carbs turn into sugar in your body, which releases insulin. This is what tells your liver to make cholesterol. Studies show saturated fat is not the enemy any more, it is sugar, corn syrup and transfats etc.

      I'm on keto diet nutritional plan hi fat moderate protein low carb.326/175 so far got rid of diabetes,hi cholesterol, no more,hi blood pressure no more off all pills now look up keto nutritional healing of the body. Dr westman specializes in reversing diabetes. So does Dr Fung, Dr phinney wonderfully source for nutritional healing

    The macros on this seem really off. Are you sure the nutrition info is correct? I'm asking because I follow keto and this is a fairly keto friendly recipe. maybe I'm wrong but the macros just look odd in comparison to other similar recipes.
