By reducing the amount of tomatoes, this cucumber salsa recipe has about half the carbs as the red kind. It’s perfect for any low carb keto diet.
We were getting some nice cucumbers from the garden until a wild animal dug it’s way in and destroyed the plants. But, at least we got to enjoy a few of them while they lasted.
I like to use fresh cucumber slices as low carb chips. Although I usually eat them plain, I’ll sometimes make some ranch flavored low carb dip for dipping them in.
However, this time I thought I’d try a cucumber salsa recipe. By replacing most of the tomatoes with cucumbers, the carbs are about half that of regular salsa.
I also served the salsa with some cucumber slices. But, it’s great to eat with a spoon as well. Or, you can add it to the top of a low carb taco salad.
This is a great dip to serve with regular tortilla chips as well. Those not following a low carb diet will enjoy the fresh taste of this homemade cucumber salsa.
I’m so glad I discovered this yummy low carb salsa recipe. It’s so much better than the kind made with all tomatoes. And, it has about half the carbs!
If our cucumber plants weren’t destroyed, I’d be making another batch. It’s a great appetizer to serve with all the summer low carb grilling recipes.
Of course, it’s a wonderful condiment for all your low carb Mexican dishes as well. I just wish the growing season was longer here to supply the ingredients.
It’s such a chore for me to run to the grocery store. And, bringing a loud mouthed four year old along doesn’t always make the trip pleasant.
But, I’ll be buying my cucumbers now since we picked the last one off the other day. I plan to make this cucumber salsa again for a family gathering later this summer.

Keto Low Carb Cucumber Salsa Recipe
- 2 medium cucumbers peeled, seeded, and chopped (about 2 1/2 cups)
- 2 medium tomatoes chopped (about 1 1/2 cups)
- 4 medium jalapeño peppers seeded and chopped
- 1/2 medium red onion chopped
- 1 clove garlic minced
- 2 tablespoons lime juice
- 2 teaspoons fresh parsley finely chopped
- 2 teaspoons fresh cilantro finely chopped
- 1/2 teaspoon salt
- Combine all ingredients in large bowl. Serve with low carb tortilla chips.
