Easy Keto Peanut Butter Balls
Lately, I have been testing out a few dessert recipes that can be eaten in just one bite... like these almond flour brownies bites or these mini cheesecake bites. They tend to be a perfect size so it satisfies my sweet tooth and helps keep me within my carb limit.
So, whenever you crave something sweet, make a batch of these delicious keto peanut butter balls.
They taste like chocolate truffles, but are high in protein and fiber - which makes them low in net carbs!
Ingredients In Chocolate Buckeyes
There are only a handful of ingredients in these little treats.
First, it has Swerve confectioner powdered sweetener. You can use any brand, as long as it is the same texture as powdered sugar. Granular or liquid sweeteners won't create the same texture. In fact, granular sweetener will leave your peanut butter balls tasting grainy.
Next, I used butter. It doesn't matter whether you use salted or unsalted butter, as long as it is real butter and not margarine.
For the peanut butter, you want as natural as possible and definitely use creamy. If you are allergic to peanuts, you can replace this with your favorite nut butter. Just make sure you are using sugar-free nut butter.
Finally, I used sugar-free chocolate chips to dip the peanut butter balls into. My favorites are ChocZero chocolate chips! They are sugar-free and have a delightful flavor without any aftertaste.

How To Make Keto Peanut Butter Balls
For the entire recipe, please scroll down to the recipe card. But first, I want to share an overview of how to make these delicious treats.
Mix all of the ingredients - except the chocolate - in a large mixing bowl. The butter needs to be melted so that it mixes into the dough perfectly.
Then, start rolling out balls that are the same shape and size. Place them on a baking sheet. Freeze the peanut butter balls by placing the entire baking sheet in the freezer.
Freeze them for at least 30 minutes.
When they are finished freezing, melt your chocolate. I prefer to use a double-broiler so that the chocolate doesn't burn.
Then, place a toothpick into each of the balls and dip them into the chocolate. I like making a mixture of white and milk chocolate - make your favorites too!
What To Serve With Low Carb Peanut Butter Balls
These make the perfect party food or guilt-free snack. If you are taking them to a party, you can serve them with other appetizers like keto onion rings.
If you want to make a bunch of low-carb sweets, make some keto white chocolate truffles and low-carb peanut butter cups. Or try some protein balls. They will all taste amazing with these little peanut butter balls!

How do you store peanut butter balls?
The best way to store these peanut butter balls is in the refrigerator in an airtight container. This way the chocolate won't melt.
They are perfectly safe to be stored at room temperature- there is just a risk of the chocolate melting if your kitchen gets hot.
Can you store peanut butter balls in the freezer?
Yes, you can freeze them again after you make them!
To prevent them from freezing into a big clump, you should freeze them on a cooking sheet in a single layer first. After they are completely frozen, you can store them in a sealable freezer bag or a freezer-safe container.
Can you make them less sweet?
If you are sensitive to the sweetness level of these treats, you can cut back on how much confectioner's sugar substitute that you used.
You can also skip dipping them in chocolate if they are still too sweet for you.
That part is completely optional.
What else can you add to the peanut butter balls?
This is the fun part! You can also drizzle sugar-free caramel syrup (like this one from ChocZero) on top of them or add some low-carb whipped topping to the top.
Keep in mind that whatever you add to the peanut butter balls will increase how many net carbs they have.

Can you melt the chocolate in the microwave?
I actually recommend against melting the chocolate chips in the microwave. I've heard of other people doing it this way. They melt the chocolate in 30-second intervals, stirring it in between each one.
Unfortunately, if you do the microwave method, it's way too easy to burn the chocolate. You have to watch it very carefully and stir it a lot.
Instead, I prefer to use the double-broiler method. This melts the chocolate slowly without burning it.
Whether you want to bring something keto to a party or you just want to make something sweet to snack on, these keto peanut butter balls are the perfect thing. They only have about 2 grams of net carbs per ball!
This means you can indulge in a few of them without any guilt.

Keto Peanut Butter Balls

Ingredients
- ½ cup butter melted
- 1 ½ cups peanut butter
- 1 ½ cups Swerve Confectioners Powdered Sweetener
- 2 cups ChocZero milk chocolate chips
- 1 teaspoon vanilla extract optional
Instructions
- Combine butter, peanut butter, powdered sweetener, and vanilla extract (if using) in a medium-sized bowl.
- Using a cookie scoop, divide peanut butter mixture into 30 evenly sized balls about 1-inch in diameter. freezer for about 30 minutes to ensure they are firm.
- Towards the end of the freezing time, start melting the chocolate in a double boiler or chocolate melter. I don't recommend using a microwave because it's easy to burn the chocolate if you aren't careful to do it in very small increments stirring after each.
- Remove balls from freezer and dip most of the way into the chocolate leaving an uncovered circle at the top. Placing a toothpick into each frozen ball works well for dipping, but don't remove the toothpick until the chocolate is set. You may need to tip the pot to get a deep enough amount of chocolate. Once coated in chocolate, place in refrigerator to set.

Another alternative to a double boiler for the chocolate, which many don't have. It to use a few tablespoons of coconut oil in it and melt in microwave in 20 second increments and stir in between. Always comes out lovely ^^

It could be the variation in peanut butter oils. But you can always reduce the butter or add more powdered sweetener or a powdered protein powder like collagen or whey protein isolate to thicken if needed.

These were wonderful! I used toothpicks for dipping, great idea, but I think I went too "heavy" on the chocolate on the first few and ran out of chocolate by the end! I am making myself a note to go easier on the chocolate at first to spread it out. I also found that by using a small ramekin to hold the chocolate it made it easier since it was small and deep. Yes! I should have put that in the notes. A small deep bowl works best and towards the end, you may need to tilt the bowl and rotate the ball to coat the bottom.

I would also add that you could use low sugar chocolate bar vs the expensive choc chips. Also you can make your own confectionery sugar by whipping up your sweetener in a blender. LC baking is very expensive.

I replaced 1/2 cup of the Swerve confectioners with 1/2 cup of whey protein powder, which I have on hand for a peanut butter fudge recipe. Figured it would be similar enough, and it turned out great! I refrigerated the mixture for 15 minutes before forming into balls and this helped it firm up nicely. I also put a toothpick in each ball before freezing, which made it much easier to dip. These are tasty for sure!
