Ingredients

Here’s everything that goes into my cheesy crustless broccoli quiche:

Eggs

The base of this quiche is 8 large eggs, giving the dish great protein content.

Heavy cream

For a creamy mix-in, I add heavy cream. For a dairy-free option, feel free to substitute for unsweetened almond milk.

Broccoli florets

Fresh broccoli is one of my favorite keto foods because it’s incredibly nutritious and versatile. 

Chopped broccoli florets are a clever way to sneak vegetables into this dish. Feel free to use fresh or frozen broccoli. 

Cheddar cheese

This quiche wouldn’t be complete without delicious cheddar cheese. Be sure to measure with your heart!

Seasoning 

I use simple seasonings in this quiche, including:

  • Salt
  • Ground black pepper
  • Garlic powder
  • Onion powder

Cooking tips

  • Pre-cook your broccoli for the best quiche texture. 
  • Once cooked, add broccoli to a paper towel-lined plate to cool. The paper towel will absorb extra liquid that could cause a watery quiche. 
  • Let your crustless broccoli quiche cool completely before storing it in the refrigerator. Condensation can make it go all mushy!

How to make crustless broccoli quiche

This crustless broccoli quiche takes just minutes to prep and comes together in 5 easy steps!

Step 1: Steam the broccoli

Steam the chopped broccoli florets until they are crisp and tender, about 4-5 minutes. Be careful not to overcook them so they don’t end up mushy in your quiche.

Step 2: Beat eggs and heavy cream

Place eggs and heavy cream in a large bowl. Whisk eggs with the heavy cream until well combined.

Step 3: Add cooled broccoli

When the broccoli is ready, lay the florets on a towel to remove any excess moisture. When cooled slightly, add broccoli to the beaten egg mixture.

Step 4: Season your crustless broccoli quiche

Add cheese, salt, onion powder, garlic powder, and pepper to the broccoli and egg mixture.

Stir the mixture to evenly blend together.

Step 5: Bake and serve

Use a bit of butter or cooking spray to grease a pie dish. Then, pour the broccoli mixture into the prepared baking dish.

Bake at 375°F for 30-40 minutes or until golden brown and fully set.

That’s it! Your breakfast is ready to be served. Let the broccoli and cheese quiche cool for a few minutes before digging in.

How to serve crustless broccoli quiche

My crustless broccoli quiche is extra delicious, topped with sour cream, chopped bacon, and crumbled feta cheese. I like to enjoy mine with a nutritious side dish of Greek yogurt and fresh berries.

Of course, also pair this broccoli cheddar quiche with your favorite morning drink, like bulletproof keto coffee or an iced matcha green tea latte.

Crustless broccoli quiche variations

This crustless quiche recipe is very versatile. Feel free to add more ingredients that you think would go well. You can even turn it into a spinach and mushroom quiche.

  • For extra protein, I like adding diced ham or crumbled bacon. You could also throw in some cooked ground sausage to add an extra burst of flavor.
  • For more vegetables, try including some sautéed mushrooms, diced onions, or peppers! Or, if you want to add a kick, diced jalapeños would add some heat to the quiche.
  • The easiest way to play with the flavor is by trying other cheeses. Parmesan, gouda, pepper jack, feta, goat cheese, or any other kind of cheese can be used to replace some or all of the cheddar.

How can I avoid a watery quiche?

There are a few reasons that a quiche can turn out watery. Here are ways to avoid having it happen:
1. Make sure your broccoli is cooked until just tender. Cooking vegetables helps them to release their moisture so it doesn’t end up in your quiche. 
2. You also want to avoid overcooking the broccoli so it doesn’t become mushy. When steaming the broccoli, I recommend checking on it after 4 minutes. Don’t steam it any longer than 5 minutes.
3. Once the broccoli is done, set the cooked florets on paper towels for a few minutes to absorb any excess liquid.
4. Don't overcook your quiche. This is because cooking the proteins in the eggs for too long will force out the liquid. So, take your crustless broccoli quiche out of the oven as soon as it’s browned and fully set.

These tips will help you bake a quiche that is perfectly set without being watery!

How should you store leftover crustless broccoli quiche?

If you have any of this crustless broccoli cheddar quiche leftover, make sure to let it cool completely. This will avoid condensation if covered warm, which can make the quiche mushy.

Once fully cooled, the leftovers can be stored covered in the refrigerator for up to 5 days in an airtight container.

What are the best keto quiche fillings?

One of my favorite things about keto quiche is how versatile it is; simply dice your favorite low-carb toppings and throw them into the egg mixture for a quick and easy meal!

For keto quiche, remember to focus on fat content, adding meat and cheese with favorable macros. Low-carb vegetables and fresh herbs also make delicious additions.

  • 8 large eggs
  • ¾ cup heavy cream
  • 10 ounces broccoli florets fresh or frozen
  • 1 ½ cups grated cheddar cheese 6 ounces
  • ½ teaspoon salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon ground black pepper

Instructions

  • Steam broccoli to crisp tender. Preheat oven to 375°F and grease or spray a pie pan (I used a 9.5-inch).
  • In large bowl, beat eggs with heavy cream.
  • Stir in broccoli, cheese, salt, onion powder, garlic powder, and pepper into egg mixture.
  • Pour the mixture into the greased pie pan and bake for 30-40 minutes or until browned and fully set.

Notes

Be sure not to overcook the broccoli as it should be cooked only until tender. Any broccoli can be used, but we prefer the florets. 
While the broccoli is simmering, the egg mixture can be started to save time.

    We are a family of 9 and this was less expensive meal for us. I added 2 beast of chicken, 1 onion to this recipe, I tripled the recipe. It was a 10 out of 10 our picky eaters loved and went back for seconds. It's hard to get a meal everyone likes. Even the neighbors kids loved it. This is a keeper!!!

    Looks great. Unfortunately what is "healthy" in your low carb 40s may not be healthy in your 60s. LDL catches up to some of us. Super sad.

    I made this for dinner tonight exactly as written and it was so much better than I imagined. I guess I did do one thing differently. I microwaved the fresh broccoli in a glass bowl with some olive oil (no water) and a plate on top to keep the moisture in for 3 mins while I grated the cheese. There was some liquid in the broccoli when it came out of the micro wave so I just used a slotted spoon to spoon it into the mix. Everything else was exactly as written. I never write reviews but this came together so fast and was so delish- I had to say something! It’s so simple, but it’s scrumptious!

      Such a simple but elegant, tasty and healthy keto quiche. I love how easy it comes together. I plan on making several and freezing the portions for my diet. I do believe 1/8 is not sufficient for a meal. I tend to eat them for breakfast, and I will either cut them into 6 slices or just eat two for a meal.

      This quiche is so delicious! I don't miss the crust at all, I think it's better without it to be honest. This was such a nice change from egg bites which I have been making since I went low carb. It was so easy to make but just feels more elegant. I can't wait to try this with different veggie and cheese combinations. This recipe is a keeper for sure!

      My pan was only 9" but my eggs were on the smaller side so it all fit just fine.

    I was looking for a keto friendly recipe for quiche. I like mine rich and creamy. This was delicious. It was creamy and full of flavor. This is also a great starter quiche for whatever you had on hand. I didn't have broccoli so I used thin asparagus cut in 1 inch slices that I blanched for 2 1/2 minutes and dropped in ice water. My husband won't eat quiche without meat so I added about 8 ounces Italian chicken sausage that I had made and frozen. Perfect recipe. Thank you for sharing and I love your web site.

      You can use half and half, but it has more carbs than heavy cream.

    Started keto and intermittent fasting about 4 months ago. Challenge in remaining compliant is in finding delicious alternatives to eat. I tried this recipe and it did not disappoint. Had it for dinner and then again for lunch several days in a row and I looked forward to eating it each and every time.

    I absolutely love this quiche. It's so easy to make and it tastes delicious. I actually love that it is crustless because I am not a fan of the crust. My husband said that this is the best quiche he tried, and he is a foodie(he is not keto either).

    Can it be frozen? I live alone so...
    Also how can it be a 5 minute prep when it takes 5 minutes just to steam the brocoli? You have a tendency to the 5 min. prep for every recipe ?

      It's about 10 minutes prep and an extra 5-10 minutes to steam the broccoli. I use an Instant Pot to cook my broccoli and it doesn't take long.

    This is delicious and oh so easy! I guess you could easily add more things, but making as- is was super quick! I just didn't have any cheese on hand except about 1/2 a cup of Pecorino Romano. That added a nice flavour and I think was enough cheese for me. My pie pan is very small so I just made it in a 9-inch square pan and cut into 9 squares. I couldn't resist having a second. 🙂

      So, I made this again with mushrooms (sauteéd) and gouda. So tasty! This will for sure be my go to ratio (8oz s'tuff' 8 eggs, 3/4 cup cream, cheese....) and will be making this all the time especially since it is also so tasty at room temperature or cold!

    This is amazing and great. I made it the day before Thanksgiving and had my family try the leftovers. There was nothing left for my husband and myself. My grandson in law ate his broccoli and liked it whoopee. He never eats vegetable's.
